Super Simple Dessert Idea (That Sounds & Looks Fancy, But Isn’t!): Mojito Nectarine Shortcakes


You should know that I really, really, love nectarines.  They’re definitely my favorite fruit.  I eat them by the dozen, usually plain and simple or sliced up and drizzled with balsamic vinegar and crème fraîche (I highly recommend that preparation…it’s so, so good!), but will generally try to incorporate them into anything when they’re in season.  I was mixing up a cocktail recipe last week {~ More on that, on Monday!} and when I put the rum I was using down next to my overflowing basket of nectarines…inspiration struck!

With so many guests coming and going, and spur-of-the moment parties happening, I am always looking for this kind of no-fuss-but-looks-fussy recipe in the summer.  This requires little effort other than slicing the fruit, and boiling water – with some honey, sugar, fresh mint, and rum stirred in.  I took some help from our local bakery and purchased the biscuits (I actually keep stacks of them individually wrapped in the freezer.  They hold up well and are so easy to thaw/reheat in the oven.), but if you want to make your own, by all means do (This recipe from Joy the Baker looks pretty perfect!)!  You could also leave the cake part out altogether and pour the ‘sauce’ {AKA glorified simple syrup} over vanilla ice cream.  I kind of equate the flavor of  it to what nights spent on the patio feel like around here…sweet, warm, and a tad on the boozy side : )

Mojito Nectarine Shortcakes

  • For the Syrup:
  • ¼ Cup Sugar
  • ¼ Cup Honey (I use a Raw variety.)
  • ¼ Cup White Rum
  • ¼ Cup Water
  • 1 Sprig Fresh Mint
  • 2-4 Prepared Shortcake Biscuits (The biscuits from our local bakery are pretty large, so I only use 2, and slice each one in half.)
  • 4 Nectarines (You can also use peaches!), Thinly Sliced
  • 1 Lime, Cut Into 4 Wedges
  • Additional Mint for Garnish
  1. For the syrup: Combine all ingredients in a small saucepan set over medium heat. Stir until the sugar is dissolved and the mixture comes to a boil. Once boiling, remove from the heat and set aside.
  2. While the syrup cools, slice your biscuits (You can warm them in the oven at this time too, if you like.) and nectarines. Arrange in bowls. Squeeze a wedge of lime over each bowl.
  3. Remove the mint from the syrup, and drizzle over the biscuits and nectarines. Garnish with mint, if desired. Serve immediately. ~ A dollop of fresh whipped cream would be a nice touch here, too : )
