Coconut Buttered Rum with Orange and Cacao Nibs

Serves: ½ cup butter; 1 drink
 
Ingredients
  • For the Coconut Butter:
  • ½ cup coconut butter or plain butter or ghee
  • 2 tablespoons brown sugar or coconut sugar
  • 1 tablespoon orange zest
  • 1 tablespoon fresh orange juice (I used blood orange juice as that is what I had on hand, but regular orange will work too!)
  • ½ tablespoon pure vanilla extract
  • 1 tablespoon ground cacao nibs
  • Generous pinch of salt
  • For the Drink:
  • 2-3 tablespoons good quality spiced rum
  • 1-2 tablespoons coconut butter mixture
  • Boiling water
Instructions
  1. To make the butter: Combine all of the ingredients in a large mixing bowl, and beat using an electric mixer (Or alternately, smoosh everything together with your hands! : )), until thoroughly combined.
  2. To make the drink: Place the rum and coconut butter mixture in the bottom of a mug (I like to start with one tablespoon of the butter and add more as I go, depending on what I feel like.). Top with boiling water and stir well. Sip and be cozy!
Notes
You can store the butter mixture, wrapped, in the refrigerator for up to two weeks.
