Lavender, Green Apple & Sage Lemonade Mocktail


Mocktails were made for Mondays.  I decided.  Sometimes you just need something delicious and sparkly to soothe your soul, without the added alcohol.  I have been whipping up things like this on the reg as my family entertains so much, and even though I want to drink with everyone else, I don’t always want to be “drinking”.  Plus no hangover!  Hangovers now hurt 9,000x worse than they used to, so mocktails it is : )

This one starts with a lemonade base.  Lemonade is my favorite beverage to experiment with as of late, after having purchased this book.  I never realized how easy it is to make, or how many flavor combinations are possible!  Here I went with green apple and sage, which to me embodies the transitional season we are in; a little bit of summer sweetness mixed with earthy fall flavors. ♥

The lavender came in to play because I have been missing the big bouquets of it I used to buy from the Santa Monica Farmers’ Market, every week.  I always kept one near my bedside to help lull me to sleep.  I found the next best thing in The Farm Shop at Los Poblanos.  If you are looking for anything lavender-related or are in need of a unique gift, I highly recommend it!  My items arrived quickly and were packaged beautifully.  I used the culinary lavender for this recipe, and also purchased the salve, which has become a new nighttime essential.  The salve is kind of like this drink: a pretty little thing, perfect for easing you out of Monday and into Tuesday {and hopefully dreamland, too!}.  XO Loves!



Lavender, Green Apple & Sage Lemonade Mocktail

Recipe type: Sips
Serves: 6 drinks
  • For the Lavender Syrup:
  • 1 cup water
  • 2 tablespoons raw honey
  • 2 tablespoons dried lavender buds
  • For the Lemonade:
  • 2 green apples, chopped
  • 6 sage leaves
  • 1 cup freshly squeezed lemon juice (about 6-8 lemons, depending upon size)
  • 2 tablespoons raw honey
  • 2 cups water
  • For Each Mocktail:
  • Ice

  • Sparkling water
  1. To Make the Lavender Syrup:
  2. Combine the water, honey, and lavender in a small pot, set over medium heat. Bring to a boil. Once boiling, remove from the heat, and allow to cool. Pass the syrup through a fine mesh sieve into a large pitcher, to remove the lavender buds. Discard the buds, or save for garnish.
  3. To Make the Lemonade:
  4. In a blender, combine the apples, sage, lemon juice, and honey. Pulse until the mixture is completely pureed. Remove from the blender, and pass through a fine mesh sieve into the same large pitcher, extracting any pulp as you go.
  5. Add the remaining 2 cups of water to the pitcher, and stir to combine.
  6. To Make the Mocktail:
  7. Fill a glass with ice. Add the lemonade mixture, until the glass is ¾ of the way full. Top with sparkling water. Enjoy!
I prefer this lemonade more on the tart side. If you would like it to be sweeter, you can double the amount of honey used in either the lemonade or syrup recipe, or both : )
