Nectarine & Cucumber Salsa with Burrata

This is a post to encompass a few things that I love as of late.

The first being pool days spent with my four year-old niece. I am teaching her how to swim, or be a better swimmer I should say. She has the basics down. She is at such a fun age right now; wanting to play, play, play for hours on end like a “big girl”, but still needing to be snuggled and wrapped up “like a burrito”, when she finally decides to emerge from the water. Conversationally she is such a riot too, with her observations on the world. I am doing my best to make note of all the funny things she says. I want to bottle these summer days up forever.

Second, I was served an Instagram ad for new-to-me brand, Autumn Sonata. I immediately purchased 2 of the cotton pool towels you see above; they are beautiful and plush. It goes without saying at this point, but I am an absolute sucker for anything in a fern/chartreuse/olive tone so these were an immediate “add to cart”! 

Finally, I quoted this cookbook in my previous post, as I am drawing a lot of inspiration from Simple Pasta: Pasta Made Easy. Life Made Better., by Odette Williams. The book offers so much more than pasta recipes, with pasta being the star (as the author herself refers to it) of course, alongside “supporting acts” of starters, salads, drinks, and desserts. I followed the outline for her “Nectarine & Cucumber Salsa with Burrata”, taking a couple of liberties as needed. I purchased a large order from Murray’s Cheese last week and as such had a container of Maplebrook Farm Burratini on hand. The creamy cheese was the perfect complement to the crunchy/spicy/sweet salsa; so good! After all, pool days call for the best pool snacks!
