Shaved Brussels Sprouts Salad with Bacon, Manchego Cheese, and Pistachios

“Crave” and “salad” are two words that you are typically not going to hear together in a sentence. This one, however, is a salad that I absolutely have to have at least (?) once a month. It’s crave-worthy, for sure.

SHAVED BRUSSELS SPROUTS SALAD WITH BACON, MANCHEGO CHEESE AND PISTACHIOs

For the dressing:
2 tablespoons fresh lemon juice
1 tablespoon Dijon mustard
1 tablespoon honey
3 tablespoons olive oil

For the salad:
2 pounds Brussels sprouts
4 slices cooked center-cut bacon
1/4 cup shredded Manchego cheese
1/4 cup chopped unsalted pistachios

For the dressing: whisk all of the ingredients together in a small bowl.

For the salad: remove any damaged leaves from the Brussels sprouts, and trim the ends. Using a sharp knife (or a mandoline, if you prefer), thinly slice the sprouts, so that they look like shavings. Toss the shavings with the bacon, cheese, and pistachios. Drizzle the dressing over the salad, and toss again. Serve with additional cheese, if desired.
