“Crave” and “salad” are two words that you are typically not going to hear together in a sentence. This one, however, is a salad that I absolutely have to have at least (?) once a month. It’s crave-worthy, for sure.
SHAVED BRUSSELS SPROUTS SALAD WITH BACON, MANCHEGO CHEESE AND PISTACHIOs
For the dressing:
2 tablespoons fresh lemon juice
1 tablespoon Dijon mustard
1 tablespoon honey
3 tablespoons olive oil
or the salad:
2 pounds Brussels sprouts
4 slices cooked center-cut bacon
1/4 cup shredded Manchego cheese
1/4 cup chopped unsalted pistachios
For the dressing: whisk all of the ingredients together in a small bowl.
For the salad: remove any damaged leaves from the Brussels sprouts, and trim the ends. Using a sharp knife (or a mandoline, if you prefer), thinly slice the sprouts, so that they look like shavings.
